A growing number of bars are adopting a process that turns fresh fruit juice into a light, foamy component known as “fluffy juice.”
Unlike traditional cocktail foam made with egg whites, cream or carbonation, fluffy juice relies on aeration.
By whisking or quickly spinning fresh orange juice, distillers introduce air into the liquid, creating a rich texture without adding additional ingredients.

The technique is widely credited to Dante, a New York City bar that popularized the technique with its version of the Garibaldi, a classic Italian cocktail made with orange juice and Campari, according to VinePair, a liquor-focused publication.

“We saw it as an opportunity to be a midday cocktail, or a reason for people to come during the day for a non-alcoholic, light, fresh drink,” Linden Pride, owner of Greenwich Village aperitivo bar Dante, told VinePair.
Since then, some bars have begun incorporating whipped oranges into their menus, using the same approach to grapefruit, pineapple and lime in updated takes on classic cocktails, the book said.

The trend’s interest has extended beyond bars, with home drinkers trying to create their own spirited concoctions.

On social media, users have shared videos showing how they whip up fresh orange juice using milk frothers or high-speed blenders to mimic the bar version.
The simplicity of the drink, requiring only orange juice and Campari, made it accessible to try at home.

In a Reddit post, a user described the drink as “the world’s best two-ingredient drink,” while another wrote, “pass on the mimosa!”

This process does not change the ingredients themselves but changes the way they are perceived, giving a new texture without adding milk whites or eggs.

Not all fruits hold an airy texture equally. Citrus and pineapple juices tend to produce a more stable foam, explains Pride.
Over time, Garibaldi Fluffy became one of Dante’s defining contributions.

“It became the symbol of Caffe Dante, what we wanted Caffe Dante to be. But I didn’t expect it to become famous all over the world the way it did,” said Pride.
